Lemon curd ! Or heaven in a jar.

I know that you cannot put heaven in a jar, or Christmas, or sun, or anything that matter, well, not literally at least. And I am not trying. Though, when I imagine how heaven, Christmas and sun would taste like, there is just one idea that comes to my mind- lemon curd!



I love, love, love lemons. I love the smell, the sour taste, the color; actually, I love everything about lemons. And it does not matter that they are extremely sour, as everything I prepare from them, or with them, is absolutely delicious! 

Last several a thought was nagging me- had no ideas what to do with the bright, sun color fruits. I did not feel like baking a pie so I ended up preparing lemon curd. I found the recipe here, though I adapted it to my taste.

Ingredients:


  • 200 ml squeezed lemon juice;
  • 500 g of sugar;
  • 100 g of butter;
  • 3 eggs;
  • Some lemon zest.

The making (super easy):

Whisk lemon juice together with sugar, eggs and lemon zest. Then put them to boil and stir till the mix changes its consistency, becomes thick. Now, while still stirring, fold in butter until well incorporated. And lastly, Let it cool; refrigerate until firm and chilled, at least for 1 hour.



The taste

Mmmm… Delicious! Not too sour and not too sweet. Perfect for those, who are sugar junkies and even for those who are not that keen of lemons. Even my family members, who loathe lemons, said that we are going to make lemon curd again, again and again! When you try lemon curd at first, you`ll want a spoon, and then, a whole jar!



P.S. It is perfect for those, who like homemade or DIY surprises.  I would just add a spoon- I believe there is no one on this earth who would refuse to taste this heavenly lemon curd on a snowy Christmas morning.
