Tell me if you like pizza and I`ll know what kind of person you are

Every week or so, here at home me and mine we tend to have a pizza night. And of course, because we love cooking so much we also love preparing the perfect (for us!) pizza dough! 

The story of this dough is very simple. While living with an Italian family I used to have a pizza night every Thursday with true, homemade, a lot and, very Italian pizza… Thursday was probably my favorite day of the whole week!:))) Because the recipe was a secret of a family and I got for a while to be a part of this family, the mum shared the recipe with me… However, I was so excited and distracted that I forgot to write it down!!!..
Anyhow, sometimes I do have a good memory and I knew what kind of sough I would like to have for a pizza, so I was able to re-create it according to my taste…And (oh,my luck) my very Italian and picky men..:) I am glad to say that my work didn`t go to waste and in our house I`m officially now the dough maker… It seems that I succeeded!:)
So, without further a due, enjoy the pizza recipe!

 The dough 

P.S. This will be enough dough for 4 people so if you are only two, adjust the amounts accordingly!


What you need:

  • 600 ml water
  • 6  spoons of olive oil
  • 2 teas spoons of sugar
  • yeast 25g
  • Flour 00  1kg 

 How to:

This is the funny part. To be honest, I quite a lot enjoy getting my hands “dirty” with pizza dough as I love it so much! And the yeast smell! Mmm…:))

Making this dough is quite easy, however you just have to remember that you have to adjust the flour accordingly to the water amount and not to pour them all at once. You want the dough to be very, very soft and quite sticky. Yes, it has to stick to your fingers!

So, let`s start. Fist, in a bowl  combine the warm water (not boiling hot!), yeast and sugar. Set aside for 5 minutes or until foamy.

In another bigger bowl, combine the  600 g of flour and salt in a large bowl and make a well in the center. Then, add the yeast mixture and oil.

Of course, don`t forget to  use your hands to bring the dough together in the bowl. Now, once the dough is almost put together but still very liquid start adding more flour so it becomes a bit more harder. However, always keep in mind that it doesn`t need to be hard dough, otherwise the pizza will be hard as well. And what we want is soft inside and crunchy outside!

Now, when you feel like the dough is enough soft and not to liquid, rinse your hand with a  bit of olive oil (this is a small secret to help flour not to stick to your hands anymore!) and work the dough with your hands for around 3 minutes.

After that, all you need to do is to cover the dough and leave it in a warm place for 2 hours.

I know that 2hours is a lot of time, but to make the really good pizza dough takes time so, be patient! Once the time has passed and the dough has grown enough, rinse a bit more olive oil on your hands and carefully bring it back together.

 After the long waiting, you should have something similar to the picture above.:)

Okay, so we are almost finished with the dough and you will be able soon enough to top it with whatever you like, but first there a few more steps you have to do!

First, brush lightly  the baking tray with olive oil and put part of your dough in the middle of the  tray.

Second,  once the dough bowl is on the baking tray, start kneading the dough with your fingers and palms from center to the sides till you get the shape you want (we usually use square baking trays so our pizza is always square, but if you want a round one, it`a not much of a difference). It is important not to use a rolling-pin for shaping the dough! Use your hands, that`s what will make the pizza soft inside but crunchy outside!

And viola! I know, the recipe is quite detailed but I`m sure if you try, you`ll fall in love with the dough as much as I did!

All you need to do know is just put the toppings on and bake it for around 15 minutes in a per-heated 200C oven!
